Located in the alps of Yamagata prefecture in Northern Japan, Dewazakura brewery is known for producing crisp, aromatic, cleanly balanced sake since they were founded in 1893. The brewery’s subzero storage technique makes it possible to enjoy delicious fresh pressed sake year-round.
Many of you are already familiar with Dewazakura as they produce a variety of popular sake including Oka, Dewasansan and Izumi Judan. Nadine and I had the pleasure of meeting their current president, Mr. Masumi Nakano, at a recent sake luncheon. As you would expect, “Omachi” is made with 100% Omachi rice. Omachi rice is unique in that it is the ancestral strain from which virtually all sake brewing rices are descended.

This sake has a luscious aroma with an ornate flavor that deepens and mellows on the palate. Mild, gently seasoned dishes best compliment Omachi’s full flavor – sweet corn croquettes, an omelette or even a pumpkin risotto.
